The tomatoes are picked by hand one by one to take only the mature red and for sure the taste and aroma of fresh tomatoes.

Wash cut in half and spread on wooden trays in the sun with coarse salt. After dried in the sun and add dry oregano, pepper and place in glass jars adding extra virgin olive oil, vinegar and following pasteurization.
